Ingredients

For the Noodle Salad

  • 200g soba noodles, rice noodles, or thin wheat noodles

  • 2 spring onions, thinly sliced
  • 1/4 cup fresh coriander or mint, optional
  • 1 tablespoon sesame seeds
  • 2 tablespoons sliced dried Royal Jujubes, optional

For the Royal Jujube Vinegar Sesame Dressing

  • 2 tablespoons Royal Jujube Vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon lime juice, optional
  • Pinch of black pepper

Instructions

  1. Cook the noodles according to the packet instructions.
  2. Rinse the noodles under cold water, then drain well.
  3. Add the noodles, cucumber, carrot, spring onions, herbs, sesame seeds, and sliced dried jujubes if using to a large bowl.
  4. In a small bowl or jar, whisk together the Royal Jujube Vinegar, soy sauce, sesame oil, honey, ginger, lime juice, and black pepper.
  5. Pour the dressing over the noodle salad.
  6. Toss gently until everything is evenly coated.
  7. Taste and adjust with extra vinegar, soy sauce, or honey if needed.
  8. Serve immediately, or chill for 10–15 minutes before serving.
