Jujube Muffins

Wholesome and flavorful jujube muffins! Made with whole wheat flour, oats, and natural sweeteners, these moist and delicious muffins are perfect for a healthy snack or breakfast.

Sweet, moist, and full of flavor!

Ingredients:

1 cup dried Jujubes (chopped)
1 1/2 cups whole wheat flour
1/2 cup oats
1/2 cup almond or coconut milk
1/4 cup olive oil or melted coconut oil
1/4 cup honey or maple syrup
1 tsp baking powder
1/2 tsp cinnamon
1/2 tsp vanilla extract
1 egg


Instructions:

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
In a mixing bowl, combine flour, oats, baking powder, cinnamon, and a pinch of salt.
In another bowl, whisk the egg, milk, oil, honey, and vanilla extract.
Add the wet ingredients to the dry ingredients and stir until just combined.
Gently fold in the chopped Jujubes.
Spoon the batter into muffin tins and bake for 18-20 minutes, or until a toothpick comes out clean.
Let cool before serving.
