Fresh Jujube Salsa

Fresh jujubes add a crisp, naturally sweet crunch to this colourful homemade salsa. Perfect with grilled meats, tacos, seafood, or tortilla chips.

Ingredients

  • 10 fresh Royal Jujubes, diced and seeds removed
  • 2 ripe tomatoes, diced
  • ½ small red onion, finely diced
  • 1 small cucumber, diced
  • 1 jalapeño, finely chopped (optional)
  • Juice of 1 lime
  • 2 tablespoons fresh coriander (cilantro), chopped
  • Salt and black pepper, to taste

Instructions

  1. Wash and dice the fresh jujubes, removing the seeds.
  2. Combine the jujubes, tomatoes, cucumber, red onion, and jalapeño in a large bowl.
  3. Add the chopped coriander and squeeze in the fresh lime juice.
  4. Season with salt and black pepper.
  5. Toss gently until everything is evenly combined.
  6. Chill for 15–20 minutes before serving.
  7. Enjoy with tortilla chips, grilled chicken, fish, tacos, or as a refreshing summer side salad.
